Lemongrass is similar to green onion, it stores the nutrition in the stem near the root and you can see that part is thicker. Because of the leaves will draw the nutrition and water from the stem, the groceries or supermarkets usually trim the leaves when they selling it, just like onions.
As long as the lemongrass is fresh and hasn't been frozen, soak the lemongrass stem in glass of water(1~2 inches). The new roots will sprout with one to two weeks.

香茅草的分類,主要區分為五種類:1. 檸檬香茅,精油市場上稱為西印度香茅(west indian lemongrass),學名: Cymbopogon citratus (DC. ex Nees) Stapf.。2. 蜿蜒香茅,學名: C. flexuosus (Nees es steud.) W,精油市場稱為東印度香茅(east indian lemongrass);3.錫蘭香茅(Ceylon citronella),學名: C. nardus。4.爪哇香茅(Java citronella),學名: C. winterianus。5.馬丁香茅(palmarosa and gingergrass),學名: C. martinii)等。前兩者主要成分為檸檬醛(citral),錫蘭香茅和爪哇香茅則主要含香茅醛(citronella)。而馬丁香茅則除了含香茅醛、香茅醇之外含大量之香葉醇(geraniol),所萃取之精油商品名即稱為玫瑰草油(palmarosa )。其它的品種類則均為主要栽培國家針對精油成分與含量或農藝性狀進行育種,所育成的品種類。臺灣過去栽培較廣的品種類為檸檬香茅和錫蘭香茅等兩種。前者具檸檬香氣,味道宜人,新鮮或乾燥莖葉均可製作茶飲、泡澡、點心及肉類、魚類之湯頭料理,或萃取精油作為芳香療法、香精料、香水及化妝品用途。後者味道濃烈,敏感者聞之,會有頭暈之感覺,適宜提煉精油以驅除不良氣味或驅蟲之用,亦常用於製作初級加工之肥皂、蠟燭等產品。此外臺灣亦有香茅草原生種,學名為 C. tortilis,散見於全台丘陵野地。禾本科中另有一屬,即培地茅屬植物,其香味存在於根部,除可萃取精油外,亦可作為藥用及水土保持植物
